My best girlfriend, Alysha, is an amazing cook particularly when it comes to baking. She has gluten allergies and she still manages to make the most delicious cookies and muffins. Alysha is the only person I have ever met that never uses a recipe even when baking. She also introduced me a few years back to eating natural, whole foods and eating primarily gluten free.
These Gluten-Free Almond Butter Cookies are made with no flour and they come out with a crunch on the outside and chewiness goodness on the inside. You can use any nut butter in this recipe and any sweetener that you prefer. I lessened up on the maple syrup as I think this would be a great mid-morning or afternoon snack.
It makes about 12 cookies.
1 cup of nut butter (I used my favourite: Trader Joe’s Raw Almond Butter)
1/2 cup of maple syrup
1 flax egg (1 tablespoon of ground flax, mixed with 3 tablespoons of water) OR you can use 1 egg (for non-vegan)
1/2 teaspoon of baking soda
1/4 teaspoon of salt
3 oz of chocolate, chopped (I used a dairy free version, if available)
~ Mix the first four ingredients in well. The mixture should pull from the bowl easily.
~ Add the chocolate
~ Place teaspoon portions on parchment paper.
~ Place in 350 degree oven for 10-12 minutes.
~ Allow to cool on pan for additional 10-12 minutes.
