I’m sitting having a rare late day coffee. It’s rare as I never drink coffee in the afternoon and it’s late because I have been celebrating my hubby, James’s, birthday!
I started the day with a breakfast, made especially for him: left over organic pulled pork with oven roasted tomatoes and roasted garlic topped with two poached eggs. I also made a side of roasted potatoes and sprouted grain bread smothered in organic butter. (Mine was leftover cauliflower rice, caramelized onion, roasted garlic and spinach topped with two poached eggs. No potatoes or toast. Extra coconut oil!)
Then I swooped him over to the spa for a loooong massage. We then went to Grouse Mountain for a skate and a little mountain walk, a quick lunch with a birthday cocktail. And, now we’re taking a coffee break before we go out for dinner. We’ll end the night, likely, with a movie where I’ll probably fall asleep within 10 minutes. Fun, right?
In true birthday spirit, I made my sweetheart a birthday smoothie equipped with two of his favourite flavours – orange and chocolate. I’ve been recreating some of my old smoothies so I’ve updated this one to be lower in sugar and and higher in healthy fats and plant-based protein.
2 cups of non-dairy milk
1 banana (ideally frozen)
1/2 avocado (ideally frozen)
2 tablespoons of raw cacao
1 tablespoon of chia seeds
1 scoop of Genuine Health Vegan Fermented Protein Powder (vanilla)
1 scoop of coconut oil
3 drops of wild orange essential oil or the zest of one orange
Optional – cacao nibs
Optional – probiotic capsule
Blend & Serve. Sprinkle with cacao nibs on top!
