I’ve been off the “grain-train” for some time now. What that means really, is that I’ve reduced my grain intact quite dramatically this past year. I’ve been dealing with some inflammation in my joints and upon some research, I’ve tested out reducing my intake to see if that would help. Well, it did. Some of those grains have include brown rice, quinoa, millet and oats.
But, I still love me some warm oatmeal. And, let’s be real here. Complex carbohydrates, like whole oats, are amazing for us in moderation. They are high in fibre and they help gives us energy to sustain use through our day and physical activity.
The husband loves anything chocolate and banana so this recipe is inspired by him. Watch out! This Gluten-Free Chunky Monkey Oatmeal recipe is highly addictive!
Gluten-Free Chunky Monkey Oatmeal
2 cups of Homemade Choco-Hazelnut Milk (or any nut milk with 2-3 tablespoons of raw cacao added to it)
1 ripe banana
1 cup of gluten free oats (or any oats if gluten is not an issue)
Maple syrup (optional)
Toppings: bananas, chopped hazelnuts, raw cacao nibs (optional)
1) Blend the banana with the 2 cups of chocolate nut milk until blended.
2) Add mixture to sauce pan and set on medium temperature until it comes to a simmer.
3) Add oats, reduce heat to low, and cook for 12 minutes (or more/less depending on stove)
4) Once cooked, pour into serving bowls and top with maple syrup and toppings.
