12 Healthy & Simple Takeaway Lunches

March is nutrition month!  What a great initiative to help educate our community about how to eat and enjoy healthy food for a whole 30 days. I was recently asked by Choices Markets, Western Canada’s largest retailer of natural and organic food, to talk with my readers about how healthy eating in the workplace is possible. And, I thought I would also share 12 Healthy & Simple Take-Away Lunches.

I’m studying holistic nutrition and (YIPPEE!) I am almost done!  As part of the program, I have to do 12 nutritional consults to hone those skills that I have (hopefully) learned.  In those consults and between conversations with friends and family, every second person I talk to has had some difficulty finding ways to eat healthy at their workplace.

I get it.  I used to be that way.

But, as I always suggest:  you can’t achieve optimal wellness, if you do not make lifestyle choices to support your health.

So, here it comes.  Healthy Eating in the Workplace + 12 Healthy & Simple Take-Away Lunches:

My top ways to eat healthy at work starts and ends with the 3 P’s:

~ Plan your lunches ahead of time (I choose Sunday mornings with Sunday afternoons being prep). That way you aren’t struggling Sunday night (or Monday morning) to “figure out what the heck I’m going to eat!”
~ Prep your meals. Sounds simple but honestly, this is the biggest element.  Just even set 1 hour an afternoon to get it together.  Invest in a crock pot, throw everything in and leave it.  That’s it!
~ Pack ahead so that you’re not scrambling around Monday morning (when you’re tired and possibly miserable)

Now onto the good stuff!

Soups on! But seriously. Making a good ol’ pot of soup or stew is the best way to stay healthy during the work day. I always make a big pot and save some for lunches and pack a few small containers in my freezer for later.  Here are a few of my favourites:

Salads tend to be my biggest go-to choice for lunch, especially in the summer.  For me, I want light, clean energy to fuel my body.  If I put something heavy in my system for lunch, I tend to loose my steam!  The following salads are light, but loaded with complex carbohydrates to help sustain you through the day:

I covet a good sandwich. What makes the mark is the bread, coupled with amazing, fresh ingredients. Gluten-free? There are some great gluten-free (or even sprouted grain) bread options out there so they sky’s the limit!
