I’m super passionate about about gut health. And trust me: in times of stress, it is incredibly important to give some additional love to your belly! And, this recipe, is definitely going to help support your digestive system in all the right ways.
Apple cider vinegar (always purchase raw and unfiltered) is so great for your gut since it is fermented providing some exceptional gut bacteria. It is so important to add in fermented foods into your diet because it helps to support digestion which in turn helps to support you immune system. ACV also helps to stabilize blood sugar which is why I add about a tablespoon to my water every morning!
Goji berries are loaded with vitamin C, and is likely one of your best sources too! I like to add them to salads or smoothies. But, in this drink, it adds a great vibrant, sunny hue along with some natural sweetener.
This is actually a traditional drink, although I’m not sure of the origin. But, I love that traditional drinks and elixirs are making a comeback for both their flavour but their medicinal qualities too!
1/3 cup raw, unpasteurized apple cider vinegar
3 Tablespoons fresh lemon juice
½ oz piece of peeled ginger root, coarsely chopped
2 Tablespoons goji berries
2-3 Tablespoon raw honey
4 cups/960 ml filtered water
Blend all ingredients into a high speed blender, and blend on high until all combined.
Pour into a fine mesh strainer.
Pour into a large mason jar or glass container and cover and refrigerate for at least 2 hours (or ideally overnight).
When ready to serve, pour over ice.
