I have been wanting to make my own nut butter for some time. I thought it would be an arduous task but it isn’t. In fact, it takes about 10 minutes of prep, blending, and your done.
Next on my list is almond or cashew milk – stay tuned!
1 cup raw, unsalted cashews
1 teaspoon coconut oil, melted (you may need more depending on how oily the nuts are)
3/4 tablespoon of raw cacao (alternatively, you could use 2 ounces quality melted milk/dark chocolate)
pinch of salt
A few pinches/drops of stevia (optional)
– Add cashews to a high powered food processor and blend until smooth, about 6-8 minutes.
– Intermittently, scrape down the sides if needed.
– Once smooth, add in the coconut oil and chocolate, blending and scraping again until totally smooth.
– Add in salt and stevia and blend again, tasting to see if it needs more.
This should be store in a sealed container, preferably in the fridge. I prefer it cold as it turns into more of fudge/chocolate bar consistency and makes a great pre-post workout snack. If you are eating within a day or two, some recommend leaving at room temp. Enjoy!
