Raw Lemon Protein Bites

You may have noticed that I have been on a homemade protein / energy bite kick!  I couldn’t get enough of these Coconut Matcha Protein Bites that I made a few weeks back.

These Raw Lemon Protein Bites give a nice lemony flavour.  If you want less of the lemony, then just omit the juice.  You all know that my husband is my biggest critic.  He loved these bites. What I actually have to do is make a couple of batches reserving one batch for me and one for him.  If I don’t, if he likes them, they’re gone!

These will make the perfect pre or post workout treat.  Or, if you’re like me and the biggest snacker in the world, I love these for a mid-day treat.  High in fibre and protein!

Serves about 12 tablespoon sized balls.

Ingredients: 

1 cup raw almonds
1/2 cup soft dates
1/2 cup coconut oil
1/2 cup unsweetened coconut flakes
1 tsp vanilla extract
Zest from one organic lemon
2 tbsp lemon juice
½ tsp. sea salt

Directions:

1) Place almonds into a food processor and process until the almonds resemble coarse flour.
2) Add remaining ingredients until everything is incorporated well.
3) Take a tablespoon amount of the mixture, roll into balls and place on tray.
4) Chill in fridge until firm and store in either fridge or freezer.
