I’ve been a Matcha fan for years!  I mean, just look at all of the recipes that I’ve created with this powerful superfood:

Are you wondering what the big deal is with matcha? Well…listen up!

Matcha is the powdered version of the entire green tea leaf plant. It is so concentrated as it has up to 137 times more antioxidants than regularly brewed green tea. It also has the ability to boost metabolism, relax the nervous system which can essentially calm the mind, enhances concentration, and balances blood sugar levels.

What I also love that is makes a great replacement to coffee as it doesn’t give you that “buzzy” feeling or that caffeine crash that coffee often gives. So, if you’re looking to ease off the java, matcha is an awesome alternative!

Raw Matcha Energy Balls

(Makes about 12-15)

INGREDIENTS:
1/3 cup medjool dates, pitted (soak in hot water for about 30 minutes if dry)
1 cup raw cashews (soaked overnight)
2 T extra-virgin coconut oil
2 T organic maple syrup
1 T matcha powder
3 T shredded coconut
2 T hemp seeds

{OPTIONAL} For a coating:
1/2 cup shredded coconut
2-3 tsp matcha powder

DIRECTIONS:
1. Place all ball ingredients in a food processor.
2. Blend until just combined and sticky enough to roll together.
3. For the coating, mix shredded coconut and matcha powder and spread onto a small plate.
4. Use a small spoon or a measuring tablespoon to tightly scoop the dough. Place dough in between your palms and roll around to form ball-shape (I like to add some coconut oil to my hands).
5. Press the ball once in the matcha coconut plate.
6. Lightly press and roll the ball until well-coated.

Store in the fridge or the freezer.
