This is the most delicious, not to mention simple soup that I have made in a long time.
2 T coconut oil, organic/virgin preferred
1 yellow onion, finely diced
1 T ginger, finely diced
4 garlic cloves, finely diced
1 T of dried coriander (you can also use fresh and during the last few minutes of cooking)
1 1/2 T curry powder
1 14-ounce can coconut milk, full fat preferred
2 C vegetable stock
1 C split red lentils
1 small cauliflower, cut into bite-sized florets
1. Heat the oil in a large, heavy pot set over medium heat and add onion, garlic, ginger, coriander and curry powder. Cook, stirring often for about 5-10 minutes.
2. Add the vegetable stock, lentils and cauliflower and bring to a simmer. Cook for about 20 minutes or when the cauliflower and lentils are cooked.
3. Add the coconut milk and simmer for another 5 minutes.
4. Top with fresh cilantro and/or hot sauce of choice. Enjoy!
